When you see a larger number looking to get out then there's something more going on. Any time a new coach comes in people get nervous but most will give the new guy a shot for the next year. However, most kids aren't going to leave after sophomore year. The window is nearly shut by then for sports (why put a lot into developing a player that will only be with you 1-2 years?), but they also are entrenched in the school, their teammates, their majors etc.
When the need presents itself and you maybe want new, you go. And from a coaching standpoint, if they will help you get to or advance in ncaa's, why not.

Stars does not get you ready for that. Many clubs don't.
